For what I paid for it, I would have thought it would've been better

Every year I make corned beef and cabbage on St. Patrick's day.  Well, what I make is technically called New England Boiled Dinner but why split hairs.  It's corned beef and cabbage combined with carrots and potatoes.

I like corned beef.  I do have to admit that I didn't like either of the two pieces of corned beef I bought this year.  The first one I bought was a point cut.  It was more of a blob of fat than it was meat.  By the time I cut the fat off it, there wasn't really a lot of meat left, so I decided to try a different recipe for corned beef.  I baked the second one, a flat cut, with dijon honey mustard and brown sugar glaze on the top of it.

It wasn't much better.  It wasn't a blob of fat but it was still plenty fatty and I've never had corned beef that had that kind of texture before.  I was kinda disappointed.

Groceries is kinda expensive these days, so I was disappointed that what I got wasn't what I was used to getting and what I paid for it was a lot more than what I did last year.  So it goes, I guess.  The funny thing was I bought the corned beef from two different stores; Smith's and Macey's.  I think next time I want to make this, I might just buy a brisket and turn it into corned beef myself.  It'd have to be better than what I got.

In an unrelated matter, I want to learn how to make my own cheese.  It's a long story, but I think I could do it if I can figure out how to age it properly.  I found a cheese press on e-bay and an online store that sells all the enzymes you need to make it.  With the price of cheese being what it is, I'm wondering if it might be worth it to try and make my own.  BTW, cheese making is further evidence that absolutely nothing goes to waste on a cow.  Absolutely nothing.  Also, trust me, you don't want to know what I mean by that if you like cheese.

Well, gang, that's all for a Sunday.  It's trying to snow, it's cold, and I'm thinking a nap after a very un-restful night's sleep is in order.  My pound puppy, Bucket the wondermutt agrees.  He's got his head next to my shoulder and he's already out.  I'm fixin' to join him shortly
