Cookin' with Gas!
I'm sharing the song for a reason today, but it's going to have nothing to do with the blog post. It was just a really good reminder of where I'm at and where I'm headed, which has nothing to do with going back to who I used to be.
I like to cook. OK, I like to eat, too. But I really do like to cook and over the years, I've picked up this recipe or that trick. I taught myself how to make chile verde and I can get close to La Frontera's recipe. Not all the way there, but I'm close. My friend's mom makes the BESTEST chile verde, though and I'm nowhere near her recipe.
I learned how to make homemade enchilada sauce, too. That stuff is getting so expensive at the grocery so I made some up. I still have half a kilo of Turkish chile powder. I used it to make my enchilada sauce and it gave it kind of a sweet flavor. We're having mexican food for dinner tonight in honor of Cinco De Mayo. I figured out how to make really good mexican rice, too. That's an easy secret: you make the rice with Knorr tomato and chicken bullion instead of water and it comes out good.
I tried to make homemade refried beans but I couldn't quite get them where I wanted them to be. Those are still somewhat affordable so tonight's will come out of a can. Hey, it's just me anyhow. June is at work so she'll heat up leftovers.
I usually make too much when I cook mexican food because I like a little bite of this, a taste of that, some of the other. I'm the same way with chinese food. I usually just order the #1 these days, but I really enjoy ordering the sweet & sour pork, chicken chow mein, eggs foo yung, and ham fried rice. There used to be a chinese restaurant in Bountiful that had these chicken strips called mon far gai. I liked that, too but you don't see it very often on the menu at chinese restaurants these days.
I own a wok and like to make Chinese food, but I can never get the batter on the shrimp or chicken or pork to come out like the stuff at the restaurant. It's not for a lack of trying. I haven't made chinese food in a long time, though. That's a process and you need to do it for more than just two people. Maybe someday. Until then, the wok sits in the cupboard in the garage collecting dust. It's right next to the coolest thing I ever bought at the Cablea's bargain cave. I paid $25 for it and it's called the "Jerky Blaster". I haven't made jerky in a very long time. I ought to someday.
I have a sausage stuffer, too, for my kitchenaid. I only tried to make it once. The sausage I made was good but I couldn't get the links to stuff properly in the casings. It's something I'd like to try again when I have more money to spend. They sell everything to make sausage at Sportsman's Warehouse. They also sell a cure to make "buckboard bacon". I made this once and it was really good, but far to salty. Didn't stop me from eating it, just from making it again. I will again when pork shoulder goes on sale again someday.
Tomorrow, I'm venturing out into a new area: Korean BBQ. My friend gave me this stuff called bulgogi. That's tomorrow night's dinner. I'm a thinkin' chile verde omelets will be for breakfast in the morning because I made some extra chile. I got the meat for it in the discount bin at Smiths. It was $2 off and I'm on a more than one meal for everything I make budget, so I'll get two meals out of it, and I didn't have to cut the pork up. It was already done for me and it was a blessing to find it on sale. God is good to me in so many ways!
Well, that's all for me. Hope y'all enjoy the song. It has a good message and it was just what I needed to hear this afternoon. This is what God does for us when we believe on Jesus as our Lord and Savior. Pastor Karl always says that God takes us as we are, but He loves us far to much to leave us this way.
